Debra's Veggie Stir Fry

​Ingredients
  • 1 package vegetarian chicken strips 
  • 0.5  cup Green Peppers chopped (optional)
  • 0.5 cup Onion chopped
  • 3 tablespoon of olive oil
  • 0.5 cup Non-Chicken Broth
  • 0.5 cup Shitake Mushrooms
  • 1 Clove of Garlic
  • 2 large Carrots sliced
  • 0.25 head of Cabbage sliced
  • Sea salt (to taste)
  • Cayenne or White Pepper (to taste)
  • 1 teaspoon Powdered Ginger
  • Brown Rice or Whole Grain Pasta (for 4)
Recipe
  • In a large sauce pan, sauté vegetarian chicken, onions, green pepper and garlic in olive oil for approximately 5 minutes or until chicken is cooked.
  • Add cabbage and sauté for another 5 minutes.
  • Combine carrots and mushrooms and cover for 3 minutes.
  • Add broth and seasonings, lower heat and cover for another 3 minutes.
  • Serve over brown rice or whole grain pasta
*The mushrooms can be substituted for the vegetarian chicken for a meatless variety.
