Debra's Fish Tacos

​Ingredients
  • 18 soft or organic corn taco shells
  • 6 white fish fillets
  • 1 medium onion (chopped)
  • 3 tablespoons chili powder
  • 1 head of romaine lettuce
  • 8 slices of rice or almond American flavor cheese
  • 1 medium tomato (chopped)
  • 3 tablespoons olive oil
  • 1 large jar of salsa (Salsa is best when there are large chunks of veggies. I prefer the Newman's Own brand.)
  • Sea Salt to taste

Debra's Veggie Tacos
Same ingredients as above, but use veggie ground meat instead of fish fillets
Directions
  • Place 3 tablespoons of olive oil in a large frying pan. Turn on medium heat to saute onions and green peppers.
  • Add the veggie meat with the vegetables. Add a couple of tablespoons of water over the meat and place lid on pan for about 3 to 4 minutes until the meat is fully cooked. If the meat is frozen, this might take a few more minutes to fully cook.
  • Dissolve approximately 3 tablespoons of chili powder in 1/2 cup of warm water and pour over veggie meat. Let the meat simmer on low heat for a few minutes to incorporate the seasoning. Follow recipe as above.
Recipe
  • Wash all vegetables before cooking.
  • Add 3 Tablespoons of olive oil to a large saute pan and turn on medium heat.
  • Saute chopped onions and green pepper for about 3 to 4 minutes.
  • Season the fish fillets with chili powder and lightly salt on both sides of the fillet and place on top of the sauteed vegetables in frying pan. Place lid on the pan for about five minutes. Remove lid and turn over the fillets, replace the lid for another five minutes. Check to make sure that the fillets are thoroughly cooked. Once fully cooked, begin chopping the fillet with the spatula.
  • Make sure to thoroughly mix the juices from the fish and vegetables and place lid on the pan until you prepare to assemble the tacos in the shells. You want to make sure that the fish is still moist when ready to serve.
  • Wash romaine lettuce and make sure to dry with paper towel.
  • Slice the lettuce and cheese slices.
  • Start assembling the shells by placing 2 to 3 tablespoons of fish in each shell. Add 2 tablespoons of salsa, a hand full of lettuce and top with one tablespoon of other ingredients. Complete the taco with about 1 teaspoon of sliced cheese. The tacos should be colorful and delicious.
